This probably isn't as world expanding as it was 10 years ago, as sushi's pretty popular now. However, Ootoro is the highest grade of fatty tuna. It's actually marbled and pinkish, and melts in your mouth. It's the Kobe Beef of the Tuna World.

ootoro sushi in Japan! Only 5 bucks!! Didn't know it was ootoro until afterwards though and I can't quite remember how it tasted. :(

With tuna at sushi restaurants, you can get different grades of tuna. Listed from highest to lowest, it's Oo-toro, Chu-toro, toro, and akami. Akami is clearly a consistent red, whereas, Oo-toro is slightly blue-brown pinkish with striation of marbled fat in across it. Be prepared to pay at least $7 to $10 for two pieces. When you put it in your mouth, savor the flavor and feel it melt in your mouth before swallowing.

WOW! I'm totally jealous! Your Japanese ootoro sushi looks WAY better than my piece from Philadelphia. (and it was $7 cheaper)
